Vinification & winemaking process
Amoriano Blend is made out of several different wineyards. Amoriano variety is the most common grape variety in Rhodes and the Dodecanese but only a few can produce top quality red dry wine that can age well. Maceration is made in low temperatures to secure only the finest tannins are passed to the wine, then 2 days with wild yeast and 5 days with several cerevisiae yeast. We use only the first run Juice that comes after maceration. 30% of the wine is aged for 6 months in french oak. Final blend is made just before summer season and bottled with only one filter.
