Winemaker’s Notes
Athiri is a grape variety that is native to Rodos, or Rhodes, Greece. It is considered an indigenous grape and is known for being a low aromatic variety. On the other hand, Assyrtiko is recognized as the top white variety of Greece and is native to Santorini. Like Athiri, it is a low aromatic variety, but it also has a unique characteristic that sets it apart. It has the ability to withstand hot weather and maintain its acidity, which makes it a resilient grape that can thrive even in a hot spot like red varieties. Overall, both these grape varieties are essential components of the Greek viticulture and contribute significantly to the country’s wine industry.
Vineyard
These historic vineyards, planted in the 1920s by Italian occupiers of Rodos Island, boast pre-phylloxera vines with European root systems. The Athiri grapevines, grown at an elevation of 950m on the limestone slopes of Mount Attaviros, are a unique expression of this terroir. Our harvest begins in early September, nearly a month after other Athiri vineyards have been picked. The dramatic temperature shifts between day and night help to preserve the grapes’ natural acidity, while the limestone soil lends minerality to the wine.Furthermore, the high-altitude location exposes the grapes to strong UV rays, which prompts the production of more aromatic compounds that protect the fruit from sun damage. All of these factors contribute to the singular character of our vineyard and the exceptional quality of our wine.
Vinification & winemaking process
This exquisite white wine is crafted from 100% organic grapes, carefully handpicked to ensure the highest quality. The wine is made from free run juice, extracted before the press begins to work, to preserve its natural aromas and flavors.
The fermentation process takes place in two tanks, using two distinctive varieties of grapes, Asyrtiko and Athiri. After fermentation, the wine is aged for six months, partially in three different barrels, one made of acacia wood, one of caucasos wood, and one of French oak. This gives the wine a unique complexity and depth of flavor.
To ensure the stability of the wine, the tanks and barrels are carefully monitored for protein and tartaric acid, and filtered only once before bottling. A small amount of CO2 is added before bottling, which helps the wine live longer and develop further in the bottle.
This white dry wine is perfect for aging, and can be cellared for at least five years. With its rich aroma and sophisticated taste, it’s ideal for pairing with seafood or creamy pasta dishes.

The wine has a medium body with just the right amount of minerality to enhance the overall experience. The Caucaso and French oak barrels give smoky notes that add depth and character to the wine.
